Muffin Mix

One of the things I love doing is making things in bulk for my big family and then having them available for future use. This is recipe is probably inspired from my mom. She had a Make-A-Mix cookbook on her cookbook rack for as long as I can remember and I know she used it often. I should probably go to her house and see if there is a recipe like this in her book.

One of the favorite mixes we’ve done in the last couple years is this base muffin mix. I can make it once and then my children or I can use it to make about 4-5 batches of muffins that we can customize at the time we make it. My 11yr old daughter actually used it to make waffles just a couple weeks ago.

A mix like this is great for a few reasons. first, I get to pick what simple ingredients are in the mix and I get to keep out additives and ingredients that I don’t love that are usually found in traditional boxed mixes. And two, I love having my children learning to cook from me and becoming independent in the kitchen. This makes it easy and fun for them with very little input from me especially on days when I might not want to get every single measuring cup and spoon and ingredient out for a recipe.

Basic Muffin Mix Recipe:

Ingredients

  • 8 cups of flour*
  • 2 1/2 cups sugar
  • 3 tbsp aluminum free baking powder
  • 2 tsp Real salt

Directions

  1. Mix all dry ingredients together and store in an air tight container. I use this one instead of glass as I want the kids to have easy, safe access to the container.
  2. To make the muffins use 2 3/4 cup of the basic muffin mix and then add 1 egg, 1 cup of milk, 1/2 cup butter. You can add any fruits or other “add-ins” at this time. Stir gently until incorporated. Bake at 400 degrees for 22 minutes or until golden brown.
